Ingredients:
- 1 lb. boneless beef ribs

- 1 large red bell pepper, diced
- 1 jalapeño pepper, diced (remove seeds for less heat)
- 1 cup shredded smoked cheddar cheese
- 1 cup cubed smoked gouda cheese
- 1 8oz. block velveeta cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 tbsp. chopped fresh cilantro
- Chips, crackers, or sliced vegetables for dipping
