Before we dive into the revolution, let's pay homage to the classic elegance of Jess Pryles' original Smoked Sausage Rolls recipe from her "Hardcore Carnivore" cookbook. Imagine ground beef, richly seasoned, mingling with grilled jalapeños, tangy cheddar, all wrapped in golden puff pastry perfection. It's a symphony of taste that has captured hearts and palates worldwide!

Grill Mark Co's Flavor-Packed Twist:
- 2 lb ground beef or smoked sausage (your choice)
- 1 tablespoon olive oil
- 1 onion, finely diced
- 1/3 cup bread crumbs
- 4 jalapeño peppers, de-seeded and grilled, then finely chopped
- 6 oz sharp or medium cheddar, finely diced (smoked on the pellet grill for added flavor)
- 4 oz goat cheese, crumbled
- 2 tablespoons fresh cilantro or parsley, chopped
- 2 cloves garlic, minced
- 1.5 teaspoons of kosher salt
- 1.5 teaspoons coarsely ground black pepper
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- 3 x 10″ squares of puff pastry, thawed
- 1 egg, beaten
Start by grilling the jalapeño peppers and smoked sausage on your pellet grill until charred and cooked through. Once grilled, finely chop the jalapeños and set aside.
In a small cast-iron skillet placed on the pellet grill, sauté the finely diced onion with olive oil until browned. Add the minced garlic during the last minute of cooking. Allow the mixture to cool.
Preheat your pellet grill to 375°F.
In a large bowl, combine the ground beef or smoked sausage (removed from casings if applicable), cooled onions and garlic, bread crumbs, finely chopped grilled jalapeños, diced smoked cheddar, crumbled goat cheese, chopped fresh cilantro or parsley, kosher salt, coarsely ground black pepper, smoked paprika, and ground cumin. Mix to thoroughly combine but try not to overwork the meat.
Lay one square of puff pastry on a board or work surface. Use a generous amount of the beef or sausage mixture to form a log down the center. Fold the pastry over the log on one side, then brush along the edge with egg mixture to create a “glue” for the other side to stick to. Continue to roll the log over so it’s fully encased in pastry, and the edges line up on the egg glue line, then press the pastry lightly to ensure a good seal.
Repeat with the remaining puff pastry squares and beef or sausage mixture.
Place the sausage rolls onto a sheet pan or a cast-iron skillet, then grill on your pellet grill for 25-30 minutes or until the pastry is golden brown and the filling is cooked through.
Serve the smoked sausage rolls with the chipotle aioli sauce on the side for drizzling or dipping. The smoky and spicy flavors of the rolls will be a delightful hit!
